GTA: SA for Xbox 1 works for Xbox 360?

game work If I put it into my Xbox 360?

The Xbox disks work fine as long as you have the Content Update from Xbox Live. I've been playing most of my old Xbox games ever since I bought the 360 back in 2008.

Correction Since Jobo is completely not knowledgeable about this. Not every game is available to play on Xbox 360 from the Xbox. It's required to have the Xbox backwards compatibility update and still some games will not work on Xbox 360. Which is why Microsoft sells the games for Original Xbox on the Dashboard because some consoles/games are not backwards compatible.
